Ingredients

  • 1 lb ground beef
  • 1 cup bread crumbs or crackers
  • 1 egg
  • 1 tsp w sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp parsley flakes
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup BBQ Sauce
  • 1/4 cup ketchup

Instructions

  • Preheat the Oven: Set your oven to 350°F (175°C).
  • In a large bowl, gently whisk the egg. Add seasonings and Worcestershire sauce. Mix these wet ingredients together until just combined to ensure the flavors are evenly distributed.
  • Add the ground beef and bread crumbs. Using your hands or a fork, lightly combine all the ingredients until they are just incorporated. It is important not to over-mix the meatloaf, as this can make it tough. Overworking the mixture develops the proteins, leading to a denser texture.
  • Divide the mixture into 4 equal portions. Gently shape each portion into a small loaf, about 3-4 inches in length. Placing them on a baking sheet lined with parchment paper or foil will make for easier cleanup. Making individual loafs allows for faster and more even cooking.
  • Top with Ketchup: Spread a generous layer of ketchup (about 1 tablespoon) over the top of each loaf.
  • Place the baking sheet with the meatloafs in the preheated oven and bake for 45 minutes.
  • To ensure the meatloaf is cooked through, insert an instant-read thermometer into the center of one of the loafs. It should register an internal temperature of 160°F (70°C). If it hasn't reached this temperature, continue baking for another 5-10 minutes.
  • Once cooked, remove the baking sheet from the oven and let the meatloafs rest for 10 minutes. This resting period allows the juices to redistribute throughout the meat.

Notes

Trust Your Thermometer: Rely on an instant-read thermometer to determine when your meatloaf is fully cooked. Visual cues alone can be misleading. Ensuring the internal temperature reaches 160°F guarantees both safety and the best possible texture.
The Importance of Resting: Don't skip the resting time after baking. Allowing the meatloaf to sit for 5-10 minutes allows the internal juices to redistribute, leading to a more moist and tender result. It also helps the meatloaf hold its shape better when sliced
